Apricot Ice Cream

Relish homemade fresh apricot ice cream with this recipe. No ice cream maker needed. Rich and creamy, flavored with apricot puree and served with crunch almond pralines.

Ingredients of Apricot Ice Cream

  • 1/2 liter apricot puree - sweetened and strained
  • 100 gm sugar
  • 125 ml water
  • 4 egg yolks
  • 350 ml cream

  • For praline:

    100 gm almonds
  • 100 gm sugar

How to Make Apricot Ice Cream

  1. Puree apricots. Dissolve sugar in water and cook for 5 minutes.
  2. Pour into beaten yolks. Whisk until thick. Cool. Add cream.
  3. Stir well. Freeze, beating at regular intervals until set. (so as to prevent formation of ice crystals)
  4. Serve with praline.

  5. To make praline:
  6. Melt sugar in a heavy pan. Add almonds.
  7. Cook over a gentle flame for about 10 minutes. Pour onto an oiled tray.
  8. Allow it to set.
  9. Crush with a rolling pin and sprinkle over ice cream before serving.
