Barley Risotto with Marinated Chicken

Barley cooked Risotto style. This rich and earthy dish is perfect for all the health fanatics! Served with marinated chicken thighs.

Ingredients of Barley Risotto with Marinated Chicken

  • For Risotto:
  • 100 gms pearl barley
  • 50 gms butter
  • 1 onion (finely chopped)
  • 2-3 cloves garlic
  • 1 stalk spring onions (chopped)
  • 100 ml white wine 100 ml
  • 500 ml stock
  • A small bunch of parsley
  • A small bunch of chives
  • A small cup of parmesan cheese
  • Pepper to taste

  • For the Chicken:
  • 2 chicken thighs
  • 1 roasted red bell pepper
  • 2 fresh red chillies
  • 1 tbsp cumin
  • 1 tsp paprika
  • 2-3 cloves garlic
  • A small bunch of oregano
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 cup tomato puree
  • A small bunch of Thyme

How to Make Barley Risotto with Marinated Chicken

  1. For Risotto:

    In a pot with some olive oil melt some butter. Add some finely chopped onions, garlic, risotto(barley).
  2. Bring to a slight boil and add stock and white wine. Chop up some spring onions.
  3. Grate in some parmesan cheese and sprinkle with some black pepper. Heat till reduced. Garnish and serve.

  5. Marinate the chicken thigh with the ingredients and set in oven for 20 minutes @200 degrees.
