Ingredients of Haryali Subz Pulao
- For the haryali puree:
- 1 cup mint leaves
- 1 cup coriander leaves
- 1 cup spinach
- 2-3 green chilies
- For the Pulao :
- 1 cup onions , finely chopped
- 2 potatoes , chopped
- 3-4 pieces sliced ginger
- 2 cup cooked basmati rice
- 3-4 ghee and oil
- Spices - 3-4 elaichi
- 2 cloves
- 1 bay leaf
- 2-3 cinnamon sticks
- 1 cup peas
- 1 cup cauliflower
- 3 cups water
- Salt to taste
How to Make Haryali Subz Pulao
1.
Boil rice and cook until soft. Strain the water and keep the rice aside,

Make a paste of the mint, coriander, chilies, and spinach.

Boil peas.

In a pan add some oil. Add raw spices, chopped veggies, and peas. Now add water and cook for 10 minutes.

Add the mixture to the vegetables and cook.

Add salt and mix well

Once the paste and vegetables are cooked. Add cooked rice to it.

Gently mix it and keep it aside.

Cook rice separately. Add veggies to rice and gently mix.
10.
Add ghee and serve the rice hot
