One-pot rice dishes are always a winner for a comforting meal. This healthy palak rice gets a tasty twist with garlic, and you can make it in just 10 minutes. Here's how:

1 tsbp oil, 1 tsbp cumin seeds, 1 tsbp minced garlic, 2 whole red chillies, 1 medium onion, chopped, spinach puree, 2 cups boiled rice

1 medium tomato, choppedSalt, to taste, 1 teaspoon garam masala, 1 teaspoon coriander powder, 1 cup

Heat 1 tablespoon oil in a pan. Add 1 teaspoon cumin and 1 tablespoon garlic, sauteing until golden.

Toss in the red chillies and chopped onion, and saute until the onions are soft and translucent.

Add chopped tomatoes and salt, then stir in 1 teaspoon each of garam masala and coriander powder. Mix well.

Stir in the spinach puree, letting it cook and blend with the spices for a few minutes.

Add the boiled rice, making sure it's well-mixed. Garnish with fresh coriander leaves and serve hot with pickle, chutney, or raita.
