Paneer fried rice is a flavourful and comforting bowl made with paneer, rice, spices and sauces. A quick stir-fry recipe that is popular across Asian households.

The best part about this recipe is that it is easy to customise. Love extra spice or more crunch? Adjust the ingredients and flavours to match your preferences.

½ cup boiled rice
8-10 paneer cubes
1 tbsp ginger-garlic paste
½ tsp red chilli powder
½ tsp pepper
1 tsp soy sauce
Salt to taste
1 chopped onion
1 chopped carrot
½ chopped capsicum
¼ cup chopped mushrooms

Cut the paneer into small cubes, coat them in cornflour, and fry until crisp. Keep the fried cubes aside for later use.

Heat some oil in a wok. Add ginger-garlic paste and stir. Then add the fried paneer cubes and let the flavours come together.

Add onions, carrots, capsicum and mushrooms to the wok. Toss everything on high flame to retain crunch and texture.

Sprinkle red chilli powder and pepper. Add soy sauce and stir well. Taste and adjust salt as needed.

Now add the boiled rice to the pan. Toss well so the sauces, vegetables, and spices coat every grain evenly.

Top with fresh coriander and chopped spring onions. Serve the paneer fried rice hot, or pair it with a bowl of Manchurian.
