Mochi ice cream is a popular Japanese treat made using mochi (stretchy, sticky rice) and filled with ice cream. Making traditional mochi takes time and serious skill.

If that sounds like too much work or you are just not in the mood, try this quick and tasty mango mochi ice cream recipe shared by Chef Parth Bajaj on Instagram.

Start by peeling a ripe mango. Chop it into small pieces and keep it aside. Now, grab a plate and add some lukewarm water to it.

Gently dip rice paper sheets in the water one at a time. Let one sheet sit for around 15-20 seconds and then lift it out.

Grease a cupcake tray and place one sheet into each mould. Add a scoop of vanilla ice cream, few mango pieces, and then more ice cream.

Carefully fold the rice paper over the filling. Do the same thing with all the rice sheets. Put the tray in the freezer for a few hours.

Your mochi ice cream is done! Use a knife to lift it out, cut it in half, and enjoy this soft, chewy mango mochi.
