Each region takes pride in its spice blends and their applications. Here are some traditional Indian masalas that you can easily make at home and stock in your pantry.

This famous Indian masala may vary slightly according to the region. It consists of cumin, coriander seeds, peppercorns, and cloves, among other spices.

Also known as milagai podi or gunpowder masala, this South Indian blend typically includes urad dal, chana dal, red chilli, curry leaf, dried coconut, etc.

Often used in Bengali and Oriya cuisines, this blend contains only five key spices: cumin, fenugreek, mustard, fennel, and nigella seeds.

Maharashtrian Goda masala features coriander seeds, sesame seeds, cumin seeds, dried coconut (kopra), cinnamon, cloves, cardamom, and other spices.
This North Indian mix includes chilli, garlic, onion, pepper, kasoori methi, and other aromatic ingredients. Use it as a seasoning or in marinades.
