5 Vegetables You Shouldn't Peel

Just like its flesh, vegetable peels are very nutritious. Removing vegetable skin is a common practice in households but should be avoided in case of these 5 vegetables.

1. Carrot

As per a 2022 study published in MDPI Open Access Journals, carrot skin is rich in fibres and antioxidants. Instead of removing the skin, wash and scrub carrots.

2. Zucchini

Zucchini skin has soluble and insoluble fibres along with antioxidants like beta-carotene. When cooked, its skin increases the overall flavour of the dish.

3. Potato

Potato skin is dirty but as per a 2009 Research Gate review, it is packed with antioxidants like polyphenols and glycoalkaloids. Just wash it properly before use.

Cucumber peel, along with flesh, is high in water content which is good for skin. Not peeling cucumber can help support healthy digestion.
