Crispy and tasty, bhatura is one half of the most loved combo – Chhole Bhature. But getting soft and fluffy bhaturas every time can be a challenge. Here are six tips to help you:

Before kneading, add a pinch of baking powder and baking soda to all-purpose flour (maida). This will help the dough rise and make bhaturas soft.

Knead the dough well for at least 10-15 minutes until it becomes smooth and elastic. If it's kneaded well, it will make the bhaturas puff up and remain soft.

Allow the dough to rest and ferment for two hours. Cover with a damp cloth to prevent it from drying out. This would make the bhaturas fluffy.

Roll out the dough into evenly sized-discs. Make sure it has medium thickness and isn't too thick or thin. Unevenly rolled bhatura might not puff up properly.

Fry the bhaturas in a medium-high heated oil. If the oil is too hot, they will get brown quickly without cooking through; if not, they will become greasy.

Fry one bhatura at a time, pressing gently with a ladle to help it puff up. This will give the bhatura enough space to cook evenly and perfectly.
