Rajasthani Mirchi Vada is a crispy, spicy snack, made with green chillies stuffed with potato filling, it can be tricky to make at home. Here are tips to get that perfect street-style crunch and taste.

Dry roast coriander seeds, cumin seeds, & anise seeds on a low flame. Crush them in a mortar along with hing, garam masala, and dry mint powder.

Mash boiled potatoes and heat oil in a pan. Add cumin seeds, chopped green chillies, and your freshly made spice mix. Saute for a few seconds.

Mix besan with salt and just enough water to make a thick, smooth batter. It should coat the chillies evenly without being too runny.

Wash and dry the chillies, then slit them lengthwise and remove the seeds. Stuff them generously with the spiced potato filling.

Heat oil until a drop of batter sizzles and rises immediately. Dip the stuffed chillies in the batter, coat them well, and fry on medium heat until golden and crispy.

Once done, place them on absorbent paper to remove excess oil. Serve piping hot with tangy tomato chutney or classic green chutney.
