Bathua's in season and what better way to enjoy it than by making a paratha of it! Bonus points if you stuff paneer in it to make it more nutritious. Here's how to make it:

2 cups wheat flour
1 cup bathua puree
1 cup grated paneer
1 green chilli
¼ tsp cumin powder
¼ tsp red chilli powder
4 tbsp coriander leaves
Water
Salt
Ghee

Mix wheat flour, bathua puree, salt, and water. Knead properly to form a soft dough. Cover and rest for 20 minutes.

In a bowl, mix crushed paneer along with green chilli, cumin powder, red chilli powder, salt, and coriander leaves. Keep aside.

Divide the dough into small balls. Roll each one out, place a portion of paneer mixture in the centre and seal the edges. Flatten it using a rolling pin.

Heat a tawa and cook the paratha on medium heat. Apply ghee until golden brown and cook evenly from both sides. Serve hot with curd and pickle!
