Bihari cuisine is all about bold flavours, and chokha is a staple you can't miss. This tomato chokha is a smoky, tangy twist on the classic, and it's ridiculously easy to make.

Tomato chokha (aka tomato bharta) takes any meal up a notch. The mustard oil gives it that punchy kick, making it totally different from anything else on your plate. Here's how to make it in no time.

Tomatoes - 3-4, Onion - 1, chopped, Green chillies - 2, finely chopped, Lemon - half, Coriander leaves - 1 tsp, Tomatoes

Roasted jeera powder - 1.5 tsp, Salt - as per taste, Sugar - a pinch, Mustard oil - as needed

Give the tomatoes a quick wash, then roast them till the skin is charred. You can do this on a grill rack or directly over the stove. The grill method adds smoky taste.

Poke a fork or knife into a tomato - if it slides in easily, you're good to go!

In a bowl, mash the roasted tomatoes & mix in chopped onions, green chillies, coriander, lemon juice, jeera powder, salt, sugar, and that all-important mustard oil.

Stir everything together until it's got a semi-liquid consistency. Best enjoyed with rice for a comforting, flavour-packed meal!
