Ragi khichdi is rich in fibre and low on the glycemic index, which makes it a perfect diabetic-friendly meal. It also manages blood sugar levels. Here's how to make it.

1 cup brown rice
½ cup moong dal
½ cup ragi
1 tsp jeera
½ tsp haldi
2 green chillies (chopped)
1 tsp garam masala
Salt
Ghee
3 cups water

Rinse the brown rice, moong dal, and ragi separately. Soak them in water for at least an hour. Once done, drain and set aside.

Heat ghee in a pressure cooker. Add jeera and let it crackle. Toss in haldi and green chillies, sauté for a minute, and keep aside.

Add the soaked grains, water, and salt to the cooker. Stir well. Pressure cook for 3-4 whistles and let the steam release naturally.

Mix garam masala into the khichdi and serve it hot with yoghurt or cucumber salad for a well-balanced diabetic-friendly meal.
