¼ tsp Salt
¼ tsp Yeast
½ cup Desiccated Coconut
¼ cup Rice
1 tbsp Sugar
Take desiccated coconut in a bowl and add rice and water. Let it soak for 6 hours.
Add salt and sugar. Grind to a smooth paste.
Add yeast and grind again to mix everything together.
Let the batter rest overnight and ferment.
Heat a pan and pour the batter. No need to grease the pan.
With a help of a spatula, spread the batter in circular motion to create a thin, fluffy Appam.
Cook only on one side till it turns brown and starts to bubble. Serve with green chutney or gravy of choice.
