Sorak curry is a wholesome veg Goan recipe that has a flavourful base made with coconut, spices and a souring agent (tamarind or kokum).

Sorak can be enjoyed with plain rice and a side of vegetables or seafood. It can also be used as a base for more complex curries.

Goan Sorak curry is a simple home-style dish. Thus, you may find several versions of it with slight variations. Here's a tried-and-tested recipe to begin with:

2 cups fresh grated coconut
1 tbsp coriander seeds
6-8 peppercorns
4 whole dried red chillies (Kashmiri)
4 garlic cloves
1-inch ginger
1 tsp cumin seeds
½ tsp turmeric powder

1 tbsp seedless tamarind
2 onions
1 tomato
2 sprig curry leaves
¼ tsp mustard seeds
2 green chillies, slit
2 tbsp oil
1-2 tsp salt, or to taste

Grind coconut, red chillies, ginger, garlic, 1 onion, coriander seeds, cumin seeds, peppercorns, tamarind, and turmeric powder to make a paste. Add water as needed.

In a kadhai, heat oil on medium heat and add the mustard seeds, curry leaves, green chilli and 1 finely sliced onion. Saute until the onions change colour.

Add chopped tomato and mix. Once they soften, add the paste made earlier. Add salt and sugar. Stir continuously for 5 minutes until it leaves oil.

Add 2 cups of hot water to this mixture and lower the flame. Simmer till it boils. Cover the vessel and turn off the heat. Serve the Sorak hot with plain rice.
