Tired of the same old anda bhurji? This winter, give it a twist with fresh methi leaves for a flavour boost that hits differently. Try this quick and easy recipe at home.

250 g Methi (fenugreek leaves), 2 Onions, chopped, 2 Tomatoes, chopped, 1-2 Green Chillies, 1 tbsp Garlic, grated, 1 tsp Ginger, grated, 1 tsp Cumin Seedsetida)

A pinch of asafoetida, 1 tsp Coriander Seeds, 1/2 tsp Turmeric, 1 tsp Garam Masala, Salt, to taste, Red Chilli Powder, Coriander leaves, for garnish, 5 Eggs

Heat some ghee or oil in a pan. Toss in the cumin seeds and let them sizzle till they turn golden and fragrant.

Add the onions, green chillies, and garlic. Cook until the onions are soft and golden.

Now throw in the tomatoes, grated ginger, salt, red chilli powder, coriander seeds, and turmeric. Stir everything and let it cook down into a masala base.

Add the fresh methi leaves and cook them till they soften. Crack the eggs right into the pan, and whisk everything together until the eggs are cooked.

Sprinkle garam masala on top, give it one last mix, and garnish with fresh coriander leaves. Serve hot and watch it disappear in minutes!
