Chicken Chettinad is a s fiery South Indian dish comes from the Chettinad region of Tamil Nadu and is known for its rich, aromatic masalas. You can make it at home with simple ingredients. Here is how.

For The Chicken
500 g Chicken
75 ml Oil
150 g Onions
100 g Tomatoes
2 g Cinnamon Sticks
2 g Cloves

5 g Cumin Seeds
2 g Curry Leaves
10 g Turmeric Powder
Salt, to taste

For The Masala
100 g Onions
50 g Ginger
50 g Garlic
20 g Cumin Seeds
25 g Black Peppercorns
10 g Dried Red Chillies
100 g Grated Coconut

Grind the onions, ginger, garlic, fennel seeds, cumin, red chillies, and coconut into a thick paste. This is the heart of the dish.

Clean the chicken and cut it into 16 pieces. Coat it evenly with the prepared masala and let it sit. This helps the flavours soak in.

Chop the tomatoes and onions. Keep them aside. Heat oil in a pan & add the cinnamon, cloves, & cumin seeds. Saute until fragrant.

Add the chopped onions and curry leaves. Cook until the onions turn golden brown. Toss in the tomatoes and saute for five minutes until soft.

Add the marinated chicken and turmeric powder. Saute for 10 minutes, sprinkling water occasionally to prevent sticking.

Season with salt, cover the pan, and cook on low heat until the chicken is tender. Garnish with fresh coriander and serve hot.
