Coconut and peanut chutney is the perfect combo of nutty & creamy coconut, with a kick from curry leaves. It's easy to whip up and will take your meals to the next level.

1 Cup Peanuts, 3 cloves Garlic, 2 Onions, 3 tbsp Oil, 3 tbsp Coconut, 3-4 Curry Leaves, 2-3 Dried Red Chillies, 1 tbsp Jaggery, 1/2 tsp Tamarind, Salt to taste

Roast the peanuts in a pan for about 10 minutes. Once they cool, remove the skins. Easy, right?

In the same pan, heat one tablespoon of oil, then toss in the garlic, dried red chillies, and chopped onions.

Sauté everything until the onions are nice and soft. Now, throw in the tamarind, salt, and jaggery, and let it cook for a minute.

In a blender, add the roasted peanuts, coconut, and the cooked mixture. Blend it all together until you get a smooth paste. Spoon it out into a bowl.

Now for the tadka! Heat some oil, toss in red chillies and curry leaves, and pour this sizzling goodness over your chutney.
