Akki roti is a flavour-packed flatbread from Karnataka. Made with rice flour, spinach, onions and a bunch of spices, it is a go-to comfort dish perfect for anytime. This one is a must-try recipe.

7 Tbsp rice flour
2 tsp any cooking oil
1/2 tsp cumin seeds
1 cup of onion, finely chopped
Half cup of cooked spinach
1 1/2 tbsp sesame seeds
1 tsp green chillies (chopped)
2 tbsp fresh coriander leaves, finely chopped
1 cup of boiled water

Take a dry pan and lightly roast the rice flour for around a minute. Once done, keep it aside and allow it to cool.

In a different pan, heat some oil. Add onions, cumin seeds, coriander, chillies and spinach. Sauté everything together for a min. Turn off the heat & let it cool down a bit.

Now, boil a full cup of water.

In a mixing bowl, bring together the cooked spinach mix and the roasted rice flour. Slowly pour in the boiling water. Once it cools a bit, knead it all into a soft dough.

Do not make it too stiff or sticky. Divide the dough into 4-5 equal balls. Dust them lightly with rice flour to stop sticking.

Use a rolling pin to gently roll each ball into a round disc. Be careful while rolling so that the dough does not tear in the middle.

Place a tawa on the stove, brush it with a little oil. Slowly put one akki roti on the hot tawa.

Let it cook for a full minute. Flip it with a spatula and cook the other side until both sides turn golden brown. Do the same for the rest of the dough.
