Poha is a quick and easy breakfast, but if you have leftovers, do not throw them away. Turn them into crispy cutlets with minimal effort. Here is a simple recipe

1 bowl of leftover poha
2-3 boiled potatoes
1 chopped onion
1 small bowl of mixed vegetables (beans, capsicum, carrot, and peas)
1 tsp red chilli powder

1 tsp garam masala
1 tsp chaat masala
1 tsp coriander powder
1 tsp jeera powder
2 tbsp rice flour
Salt to taste
Oil for shallow frying

Take the leftover poha in a bowl and mash it well.

Mix in the boiled potatoes, onion, capsicum, and green chilli and red chilli , jeera powder, coriander, garam masala, chaat masala, salt, and rice flour.

Add chopped coriander leaves. Grease your hands with oil and mix everything into a dough.

Shape the mixture into cutlets. Heat oil in a pan and shallow-fry them on medium heat until golden brown on both sides.

Serve the crispy poha cutlets hot with green chutney or ketchup.
