Ghee podi masala is a staple in South Indian households, used to add flavour to idlis, dosas, or rice. If you wish to make this spice mix at home, here's an easy recipe to try:

Begin by dry roasting urad dal and chana dal in a pan until they turn golden brown. This step enhances their flavour and adds crunchiness.

Toss in cumin seeds, coriander seeds, and dried red chillies with the roasted lentils. Continue roasting until the spices release an aroma.

Once the roasted ingredients cool down, grind them into a coarse powder. The texture should remain slightly grainy to retain crunch.

Mix the ground spice blend with a generous amount of ghee. This will help deepen the flavour and bind the masala together for easier use.

Transfer the ghee podi masala to an airtight container. Keep it stored in a cool place and use it to instantly elevate your favourite dishes!
