Gheeyar, a Sindhi version of jalebi, is a festive sweet enjoyed during Holi. It has a crispy, net-like texture. Here's how you can prepare it at home.

1½ cups flour, 2 tbsp cornflour, ¾ cup yoghurt, 2 cups sugar, 3-4 cardamom pods, ½ tsp saffron, water.

Mix flour, cornflour, and yoghurt. Add water to form a smooth batter. Whisk well and ferment for 24 hours.

Boil sugar, water, cardamom, and saffron until it reaches a one-string consistency.

Heat oil in a pan and put a ring cutter. Using a squeeze bottle, create net-like patterns inside the ring.

Cook on medium flame, flipping for even frying. Drain excess oil.

Dip the fried gheeyar in warm sugar syrup for a minute, then let it drain.

Top with pistachios and rose petals. Let it cool completely for the best crunch.
