Get all your ingredients - spices, coconut, mutton, onions, and tomatoes - in one place. It makes the cooking process smoother.

No one likes tough, chewy mutton. The best way to ensure soft, melt-in-the-mouth pieces is to cook them in a pressure cooker.

Cook the mutton with water, turmeric, curry leaves, ginger, garlic, shallots, & salt. Mix well and pressure cook for around 15-20 mins.

Heat coconut oil in a pan, & toss in the curry leaves and onions. Saute for a min. This step enhances the aroma and depth of the curry.

Add fresh coconut, tomatoes, & red chilli powder to the pan, followed by the cooked mutton. Do not forget to pour in the cooking water as well.

Lower the heat, cover the pan, and let the curry simmer for 20-25 minutes. Stir occasionally to prevent sticking.
