Tapioca chips are made from the roots of the cassava plant. These chips are crispy and have a sweet-meets-salty taste. Here's how you can make these Kerala-style chips at home.

-1 tapioca
-Oil (for deep fry)
-Salt (to taste)
-Red chilli powder (as needed)

Take tapioca and cut it into two lengthwise. Using a flat spatula, tear off the skin. Wash well and immerse in water for 15 minutes. Pat it dry with a clean towel.

Heat oil in a kadai. Using a sharp mandolin slicer, slice the tapioca over hot oil.

Once the sound and bubbles reduce, stir well and let these cook on medium flame.

Once the chips start cooking, the edges will turn golden. Chips will be light and will become crispy while stirring.

Drain the chips from the oil and repeat the process with more batches. Sprinkle salt and red chilli powder. Toss well. Enjoy!
