Masala Bhaat is a wholesome and flavourful rice preparation. This Maharashtrian recipe is fairly easy to make at home. It can be as simple or as impressive as needed.

You can have this Maharashtrian dish as a fuss-free meal by itself, pack it for your tiffin lunch or feature it as part of regal Maharashtrian thali.

1 cup rice
2 tbsp oil
1-inch ginger
¼ tsp each: mustard & cumin seeds
1 tbsp groundnuts
1 tbsp each: lime juice, grated coconut, coriander leaves, jaggery

1 onion
1 tomato
2 cups mixed veggies (potatoes, peas, tendli, brinjal, carrot, etc.)
2 green chillies, slit
1 sprig curry leaves

1 bay leaf
2 cardamoms
1-inch cinnamon stick
4 peppercorns
4 cloves
½ tsp each: turmeric & chilli powder
¼ tsp asafoetida
2 tsp goda masala
2 dry red chillies

Wash and soak the rice for 30 minutes. Dice the mixed veggies and keep ready. Finely chop the onions, tomatoes and ginger.

Heat oil in a pan or kadhai. Add whole spices followed by mustard seeds, cumin seeds, ginger, curry leaves, green chillies and red chillies.

Saute for a few seconds and then add the onions. Cook till they turn translucent. Add all powdered masalas, peanuts, tomato and jaggery. Mix and cook for 2 minutes.

Add the veggies and saute for 2 minutes. Drain the rice and add it to the vessel.

Add 2 cups of warm water and 1-2 tsp salt (or to taste). Mix well, cover and allow it to cook on low flame for 20 minutes.

Remove the lid and add lemon juice. Garnish with coriander and coconut. Enjoy the delicious Masala Bhaat hot with curd or raita.
