In a glass bowl, mix mutton pieces with one tsp ginger-garlic paste, red chilli powder, turmeric powder, salt, biryani masala and curd.
Mix the mutton and other ingredients thoroughly and refrigerate for four hours.
In a thick-bottomed pan, boil one cup rice with two cups water. Cook till the rice is 80% done.
Heat mustard oil, add bay leaf, cumin seeds, ginger-garlic paste and chopped onion in a pan.
Cook for a minute, then add the marinated mutton to it. Cover the lid and let mutton soak in the spices.
Add two cups of water and one tsp salt to the meat. Let it cook till the meat becomes tender.
Now mix in the boiled rice, green chillies, biryani masala, melted ghee, saffron milk and coriander leaves.
Place the pan on a flat tawa. Seal it with aluminium foil. Cook for 20 minutes on medium flame.
Remove the lid and mix the biryani well. Serve with raita!
