How To Make Pasta In Refreshing Mint Sauce

This quick and easy summer pasta recipe is perfect for days when you want something light, but flavour packed.

In this pasta recipe, penne pasta is tossed with carrots, capsicum, onions and a super refreshing mint sauce. It is ideal for an easy pasta dinner.

Ingredients:

250 gm spaghetti, 4 Tbsp mint sauce, 5 sausages, A bunch of green onions, 1 pod garlic, 3 Tbsp spinach paste, Salt and pepper – to taste, Olive oil

For the Mint Sauce:

1 bunch mint leaves, 1/2 bunch coriander leaves, 4 green chillies, 2 tsp tamarind pulp, Salt to taste,  A splash of water – grind it all to a smooth paste

Step-1

Start by boiling the pasta. Drop the pasta only once the water is bubbling properly. No need to add oil – the boiling water does the trick.

Once it is cooked, drain the pasta using a colander and save some of that starchy cooking water. You will need it later.

For the sauce, warm 2 tsp of olive oil in a non-stick pan. Keep the heat on medium. Add chopped green onions and garlic and give them a quick sauté.

Do not cover the pan – you will lose the lovely green colour of the onions. If green onions are not available, red or white onions will work too.

Once the onions are soft, add the sausages. Chop them up and toss them in. Stir everything around so the flavours mix well.

Add the spinach paste and sauté for about a minute. Then gently mix in the drained pasta without breaking it.

To add flavour and help coat the pasta, pour in some of that reserved cooking liquid – about half a cup should do the job.

Let it simmer for 2 minutes, then add the mint sauce. Toss the pasta gently so every piece gets covered in that minty goodness.

Now season with salt and pepper. Go easy on the pepper though – the mint sauce already brings some heat.

Top it off with chopped onions and a little squeeze of lemon if you like. Serve this mint sauce pasta piping hot.
