The secret to a perfect shikanji lies in its spice mix. Making a premix at home saves time and lets you whip up a glass in minutes.

4 tbsp roasted cumin
4 tbsp roasted black pepper
2 tbsp dry ginger powder
2 tbsp dry mango powder
2 tbsp black salt
11-13 tbsp mishri (rock sugar)

To make shikanji premix, add all the ingredients to a grinder.
