Prepare gol gappa paani by grinding together mint leaves, coriander leaves, green chillies and ginger.
To the ground paste, add imli sauce, salt, cumin powder and chaat masala. Further, add 2 cups of water and boondi.
Prepare filling by mixing together boiled potato, boiled kala chana, cumin powder, chaat masala, salt and coriander leaves.
Take sooji in a bowl. Add salt, oil and water. Knead it into a smooth dough. Let it rest for 30 minutes.
Break the dough into small parts. Roll the dough flat into medium thickness.
Fry the sooji poori until it puffs up and turn golden-brown from both sides.
Serve with the potato filling and gol gappa paani.
