Creamy and delicious, sweet corn soup screams comfort in monsoon. It is easy to make and doesn't require much effort. Here's how you can make this delicious soup at home.

To make this soup, you will need sweet corn kernels, blended corn, vegetable stock, onion, garlic, carrot, spring onion, cornstarch, salt, black pepper and oil.

In a pot, heat 2 tbsp of oil over medium heat. Add 1 chopped onion, 2 minced garlic cloves, chopped carrot and spring onion. Saute until soft.

Add 1 cup of sweet corn and blended corn in the pot. Then pour 4 cups of vegetable stock and boil it. Let it simmer for 10 minutes to meld flavours.

Take 2 tablespoons of cornstarch and make a slurry with water. Slowly add this to your soup while stirring continuously. Cook for another 5 minutes.

Add salt and pepper to the soup. You can also top the soup with some more sweet corn kernels. Garnish with chopped spring onions and serve hot.
