Khichdi is a staple in Indian homes, and there's no shortage of ways to make it. This winter, try bajra khichdi - a wholesome dish straight from Rajasthan. Folloe the simple recipe.

2 cups bajra, 1 cup moong dal, 1 tsp salt, 2 Tbsp ghee, 1/8 tsp asafoetida (hing), 1 tsp cumin, 2 tsp coriander powder, 1 tsp garam masala, 1 tsp chilli powder

Wash the bajra thoroughly, drain, and lightly pound it. Toss to remove the husk and repeat until most of the husk is gone.

Combine the bajra and moong dal with enough water to create a soft, paste-like consistency. Pressure cook the mixture for 4 whistles to ensure it's tender.

Once the cumin seeds start crackling, pour in the bajra mixture. Let it simmer for 2-3 minutes, then serve it warm.
