Crush a small amount and sniff. Fresh spices should have a strong smell. A faint or no smell means the oils have likely evaporated.

Humidity can ruin the spice. If your spices are clumped together or feel moist, throw them away. They probably absorbed too much moisture.

Take a small amount of spice and taste it. If it doesn't evoke a taste in your mouth, it is most likely expired and shouldn't be used in dishes.
