Tomatoes, vinegar, and citrus can break down the seasoning if cooked for too long. If you cook them, keep it quick to avoid damaging the surface.

Harsh soaps strip away seasoning. Stick to warm water and a soft brush for cleaning. Dry it immediately and rub on a thin layer of oil to prevent rust.
