Khoya paneer is creamy, rich, and satisfying. This one's made with a blend of cashews, khoya, and cardamom, all simmered with soft chunks of paneer for that restaurant-style taste at home.

1 cup cashew nuts
500 gms paneer (cubed)
2 tbsp desi ghee
1/2 cup khoya
1/4 cup curd
1/2 nos ginger, chopped
2-3 nos green cardamom
2-3 nos green chilli, chopped
to taste salt
2-3 nos green coriander

Wash the cashew nuts, boil them until soft, and grind them into a smooth paste.

In a deep pan, heat desi ghee. Add chopped green chillies and cardamom pods. Let them crackle and get fragrant.

Add the cashew paste, whisked curd, and salt. Cook this mix on a low flame for 10 minutes, stirring occasionally.

Now add grated khoya and paneer cubes to the pot. Stir gently to coat everything well. Adjust seasoning if needed.
