Moogacha Bhaat is a Maharashtrian-style rice preparation featuring sprouted green moong (mung beans). This home-style recipe is similar to pulao but doesn't need many vegetables.

Wholesome and flavourful, Maharashtrian-style moogacha bhaat can be easily customised to suit your preferences. Here's one easy way of cooking it at home:

1 cup rice
1 cup moong sprouts
1 onion1 tomato
4 green chillies
1 tbsp ginger garlic paste
½ cup each: mint & coriander leaves
1 tsp cumin seeds
½ tsp haldi powder

1 tsp each: chilli powder & garam masala
1-inch cinnamon stick
4 cloves
6-8 peppercorns
1 star anise seed
4 green cardamoms
2 bay leaves
2 tbsp oil
Salt to taste

Wash and soak the rice for half an hour. Set aside

Heat oil in a kadhai and add cumin seeds and the other whole spices in the ingredients list. Next, add ginger garlic paste and saute for around a minute.

Add finely sliced onion to the kadhai. Once it turns translucent, add finely chopped green chillies and tomato, followed by the listed spice masalas and 2 tsp salt.

Next, add the mint and coriander leaves. Simmer the mixture on a low flame for 5 minutes.

Once the base masala/mixture begins to leave the oil, add the moong sprouts and the soaked rice to the kadhai. Pour 3 cups of hot water, stir and cover the vessel.

Cook the dish for 15-20 minutes on a low flame. Later, top the Moogacha Bhaat with lemon juice and garnish it with chopped coriander leaves. Enjoy it with curd or achaar.
