How To Make Maharashtrian Zunka Bhakri

Zunka or jhunka is a traditional Maharashtrian recipe made with besan, onions, and spices. It's an easy and wholesome dish that can be prepared in around 30 minutes.

Zunka is a dry sabzi-like preparation that only requires simple, everyday ingredients. Here's how you can make it at home:

INGREDIENTS

For the ghol:
1 glass water
2 onions, finely chopped
1/2 tsp turmeric powder
1/2 tsp red chilli powder
6-7 curry leaves
7-8 coriander leaves
1 cup besan

For the sabzi:
4 tsp oil
1/2 tsp each of mustard & cumin seeds
1/2 tsp garlic paste
1/2 tsp ginger paste
1 small onion
1/2 tsp green chillies, finely chopped
Salt to taste

Step 1

Combine water, besan, onions, red chilli powder, turmeric powder, coriander and curry leaves in a bowl to make the ghol.

Step 2

Mix all the ingredients well until you get a liquid consistency free of lumps. Set aside.

Step 3

Heat oil in a kadhai. Splutter mustard seeds and cumin seeds. Add the ginger and garlic paste, followed by the finely chopped onion and green chillies.

Step 4

Saute the ingredients well for 2-3 minutes until the onions change colour. Once done, add the ghol you had set aside earlier to the kadhai.

Step 5

Cook for around 5 minutes, allowing all the water to evaporate. What remains is a dry but flavourful sabzi-like dish best enjoyed hot.
