Shrikhand is a creamy dairy-based dessert popularly made in the western regions of India – especially in Gujarat and Maharashtra. It can have many distinct flavours.

Amrakhand or mango shrikhand is one of the most popular varieties of this sweet delicacy. It can be paired with puris/rotis or enjoyed on its own. It is a great summer treat!

Amrakhand requires only a handful of ingredients. Here's how you can make Gujarati-style mango shrikhand at home:

½ kg dahi
1 cup mango pulp
2 tbsp milk
1 tbsp powdered sugar
½ tsp cardamom powder
Pinch of saffron strands (soaked in 1 tbsp warm milk)
Chopped pistachios/almonds

Add dahi to a muslin cloth and tie it tight. Place it over a mesh strainer and bowl to let the excess water/whey drip down. Hang it overnight (or 4-5 hours) in the fridge.

Transfer the hung curd to a large mixing bowl. Add the milk, powdered sugar, cardamom powder and soaked kesar (saffron). Whisk them to combine well.

Add the mango pulp. Incorporate it with the other ingredients by continuously whisking them together. The final result should be smooth and creamy.

Your shrikhand is ready! Top it with chopped almonds and pistachios. You can also add a few small pieces of fresh mango. Store it in the refrigerator.
