Upma is a South Indian favourite, and it comes in so many varieties! If you're looking for a twist, Masala Tomato Upma is something you have to try. It's simple way to your morning.

1 cup suji, 1 onion, chopped, 1 tomato, chopped, ½ cup tomato puree, 1 cup mixed vegetables (carrot, capsicum, peas), 2 tbsp oil1 tsp ghee

½ tsp each: red chilli powder, turmeric, coriander powder, cumin seeds, 1 tsp mustard seeds, 6-7 curry leaves, Salt to taste, 1 tbsp coriander leaves, chopped

Heat a pan and add 1 cup of suji to it. Dry roast for a few minutes, then set it aside.

In the same pan, heat 2 tablespoons of oil. Add mustard seeds, urad dal, and cumin seeds, and let them sizzle.

Toss in the chopped onion and sauté until soft. Add in a chopped green chilli, some ginger, and your mixed veggies like peas, capsicum, and carrot. Sauté them too!

Now, pour in ½ cup of tomato puree and a chopped tomato. Cook for 2 minutes, then mix in red chilli powder, turmeric, coriander powder, and salt.

Add 3 cups of water, bring it to a boil, then stir in 1 tsp of ghee. Cover the pan and let it simmer.

After a minute, remove the lid and slowly add the roasted suji in batches, stirring continuously to avoid lumps.

Finish it off with a few drops of lemon juice and a sprinkle of coriander leaves. Your delicious Masala Tomato Upma is ready!
