Looking for an alternative to tomatoes? Try this simple no-tomato gravy base. Use it to make malai kofta, shahi paneer or any dish of your choice. Here's how to make it.

2 medium onions, chopped
2 tbsp oil
1 tbsp ginger-garlic paste
8-10 cashews
2 tbsp curd
1 tsp jeera
½ tsp haldi
1 tsp coriander powder
½ tsp red chilli powder
Salt

In a kadhai, heat oil. Now add jeera and let it splutter. Then add onions and saute until golden brown. Add ginger-garlic paste and cook for 2 minutes.

Now lower the heat and add spices - haldi, coriander powder, salt, and red chilli powder. Mix well to combine all ingredients.

Soak cashews in warm water for 10 minutes. Drain the water and blend it into a smooth paste. This will add creaminess to the no-tomato gravy.

Gradually whisk curd and add it to the onion paste. Stir continuously to avoid curdling. Cook for 2-3 mins before adding the cashew paste. Mix well.

Add water to adjust consistency. Garnish with coriander leaves and add your kofta balls, paneer or chicken to enjoy this hassle-free, delicious gravy!
