Thoran is a popular type of stir-fry vegetable dish from Kerala. It has many versions, since it can be made with different veggies like cabbage, carrot, beetroot, etc.

Thoran is one of the vegetable preparations served as part of the Onam Sadhya. But it is also enjoyed year-round, since it is wholesome and not as heavy as the other festive dishes.

Want a Thoran recipe for Onam 2025? Beetroot Thoran is easy to start with. Here's how to make one version of it at home:

2 cups grated/finely chopped beetroot
4 shallots, chopped
2 sprigs curry leaves, pat dry
4 garlic cloves
2 green chillies
2 dried red chillies

1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 cup fresh grated coconut
2 tbsp coconut oil
1/2 tsp turmeric powder
1 tsp salt, or to taste

Coarsely grind the coconut, cumin seeds, green chillies and garlic together. Set aside.

Heat oil in a heavy-bottomed kadhai. Add the mustard seeds and let them splutter. Then add the curry leaves, red chillies and shallots.

Once the shallots soften, add turmeric and salt. Next, add the grated beetroot and mix well. Cover and cook for around 5 minutes.

Add the coconut paste prepared earlier to the cooked beetroot mixture. Stir for 2-3 minutes. Your beetroot thoran is ready to be served.
