Step 1

Soak the rinsed dal in water and then set it to boil with bay leaves. It will take about 25 minutes.

Prepare the tadka by heating oil and adding cumin seeds, shallot, curry leaves, green chilies, ginger, salt, turmeric, and tomatoes.

Add a pinch of sambhar powder to the tadka, along with some amchur and more curry leaves.

Transfer the tadka to the pot of the almost-cooked dal.

Mix and add some freshly chopped cilantro, a bit of ghee, and a few drops of lemon juice.
