Love mutton? Then make this delicious Mutton Rogan Josh at home! Packed with rich spices and flavours, it's perfect for a weekend dinner. Here's how to make it.

1/2 kg mutton
3 tbsp mustard oil
2 onions, sliced
2 tbsp curd
1 tbsp ginger-garlic paste
1 tsp haldi
1/2 tsp saunf powder
1/2 tsp ginger powder
1 tsp coriander powder

Half tsp garam masala
2-3 cloves
2-3 cardamoms
1 badi elaichi
1-inch cinnamon stick
1 bay leaf
2 cups water
Salt, to taste
Coriander leaves, for garnish

Heat mustard oil in a pan. Add the bay leaf, cloves, cardamom, cinnamon, and sliced onions. Stir well and cook until the spices release their aroma.

Add mutton pieces to the pan and mix. Add the ginger-garlic paste, saunf powder, ginger powder, coriander powder, haldi, and Kashmiri red chilli powder.

Add curd and water. Mix, cover, and let it cook on low heat for 40-50 mins until the mutton is tender. Stir occasionally and adjust the water as needed.

Once the mutton is cooked through and tender, stir in the garam masala and cook for another 5 minutes. Garnish with coriander leaves and serve hot.
