Want to make a different type of soup this winter? Have you ever made one using sweet potatoes? If not, you really should try this recipe.

Sweet potatoes are not only nutritious but also versatile. You can make a delicious and wholesome soup with it, flavoured with everyday ingredients.

Our recipe is inspired by Thai-style sweet potato soup but you can easily make it at home using common Indian ingredients. Here's the complete recipe:

1-2 tbsp oil
3 cups sweet potatoes
1 onion
2 carrots
1 red bell pepper
1 tsp white sesame seeds
3 whole dried red chillies
2 tbsp Thai red curry paste (optional)

2 garlic cloves
1 tsp ginger, finely chopped
3 cups vegetable stock
1 tbsp soy sauce
200 ml coconut milk
Salt and Pepper to taste

Don't have readymade Thai red curry paste? Blend chopped red bell pepper, white sesame seeds and whole dried red chillies to prepare your own paste for this soup.

Heat oil in a pot over medium flame. Add the chopped onion and saute until soft. Next, add garlic, ginger and red paste. Saute for 2 minutes.

Add the chopped sweet potatoes and carrots. Stir-fry them for approximately 5 minutes. Pour the vegetable broth and coconut milk into the pot.

Add soy sauce and stir well. Once this broth starts boiling, lower the heat and cover the pot. Let it cook for 20-30 minutes and stir occasionally.

Allow the broth to simmer. Once the potatoes have softened, turn off the heat and allow the mixture to cool for 5 minutes. Blend to form a smooth, thick soup.

While blending, add more broth or coconut milk as needed. Taste and add salt/pepper/seasonings as desired. Garnish the sweet potato soup with coriander or peanuts.
