1 tbsp Urad Dal
1 tbsp Chana Dal
15 Whole Red Chillies
2 tbsp Ginger
A pinch of Hing
1 tsp Mustard Seeds
1 tbsp Imli Paste
1 tbsp Gur Powder (Jaggery)
1 tsp Methi Seeds
5-6 Curry Leaves
1 tsp Cumin Seeds
1 tsp Coriander Seeds
Heat oil in a pan and add ginger. Saute till the colour changes slightly and keep aside.
In the same pan, add chana dal, urad dal, coriander seeds, cumin seeds, methi seeds and red chillies. Saute for 2-3 minutes.
Once the masala mix cools down, add fried ginger, gur powder (jaggery) and imli paste. Then, grind to make a paste.
Prepare a tadka or tempering with curry leaves, hing, chana dal, urad dal, mustard seeds and red chillies.
Pour the tadka over the ginger mixture prepared earlier. Your South Indian-style ginger chutney is ready!
