Obsessed with samosas? Give these potli samosas a try - crunchy on the outside and stuffed with spicy potato goodness! Here's an easy recipe.

Mix maida, salt, and oil until crumbly. Add water and knead into a stiff dough. Cover and rest for 30 mins.

After resting, knead the dough again and divide it into small portions for individual potlis.

Heat oil. Add jeera, fennel seeds, ginger, chillies, and onion. Saute briefly.

Add coriander seeds, garam masala, amchur, salt, and mashed potatoes. Mix well. Add kasuri methi and coriander. Turn off the heat.
Roll dough into thin discs. Add filling. Brush edges with water, bring them together, and seal them like potli.

Deep-fry potlis on medium-high flame till golden and crispy. Serve hot
