This street-style egg masala sandwich is a perfect breakfast recipe. It can be prepared in just 10 minutes. Pair it with green chutney for a satisfying and flavourful meal.

5 boiled eggs (chopped)
1 onion (finely chopped)
1 tomato (finely chopped)
1 tsp cumin seeds
2 green chillies (finely chopped)
1 tsp ginger-garlic paste
1 tbsp oil

2 tbsp butter
½ tsp red chilli powder
¼ tsp black pepper powder
1 tsp coriander powder
1 tsp cumin powder
Salt to taste
2 tbsp green chutney
2 tbsp red chutney
Bread slices (as needed)

Heat oil in a pan. Add cumin seeds, chopped onion, and ginger-garlic paste. Sauté until the onions turn golden.

Add chopped tomato and cook for a few minutes. Then add green chillies, red chilli powder, coriander powder, black pepper, cumin powder, and salt. Mix well and cook until the tomatoes soften.

Add the chopped boiled eggs and combine everything well. Turn off the heat.

Take two slices of bread. Spread butter and green chutney on both slices. Apply a layer of red chutney on one slice, then add the egg masala mixture.

Cover with the second slice. Heat a pan, add some butter, and toast the sandwich on both sides until crispy and golden brown.
