1. Sort the leaves first

Once you purchase bunches of leafy greens, sort the healthy, good leaves from the ones that have already begun to wilt and lose their colour.

2. Wash the leaves well

It is crucial to wash the greens under running water without haste. Take time to clean each leaf properly.

3. Dry the leaves properly

Get rid of excess water and immediately pat the leafy greens dry. Remember that you don't want too much moisture to remain.

4. Blanch the leafy greens

Blanching the greens is an added step for safer consumption. This will take just a few minutes. But don't keep them in hot water for too long.

5. Give them an ice bath

After blanching the leafy greens in hot water, immediately transfer them to ice water and keep for a minute to maintain their colour and crunch.
