Mix Vegetable Uttapam is the ultimate way to load up on flavour and nutrients in one easy, tasty dish. Here's how to nail it with a few simple steps!

1 small onion, finely chopped
1 tomato, finely chopped
1 small carrot, grated
Oil or ghee

Start by soaking 1 cup of rice and 1/3 cup of urad dal for a few hours. Grind it all into a smooth batter and let it ferment overnight.

Get your veggies prepped: finely chop the onion, tomato, and green chilli, grate the carrot, and chop the bell pepper and coriander leaves.
