This is a quick, no-fuss rice recipe boosted with the creamy, nutty taste of coconut. Perfect for a simple lunch or an easy dinner that does not mess around.

1 cup Rice
1 1/2 cup Coconut milk
2 cups Water
2 tsp Ginger-garlic paste
1-2 Green chillies
2 tbsp Oil
1 Bay leaf
4 Green cardamoms
6 Cloves
1 tsp Cinnamon
1 tsp Cumin seeds
Salt to taste

Heat oil in a pressure cooker and lightly fry whole spices - cumin seeds, cardamom, cinnamon, cloves, green cardamom and bay leaf - until fragrant.

Toss in the ginger-garlic paste and fry until the aroma hits you. Add the green chillies to kick it up a notch.

If you want to sneak in some vegetables, add them here. Totally optional, but a nice way to bulk up the meal.

Add the coconut milk and water, then the rice. Give it a good mix to combine everything well. Seal the pressure cooker.
