This creamy, flavourful dish comes together in just 15 mins, making it perfect for weeknight dinners or even last-minute guest situations. Here's how you can make Anda Malai Curry.

4 Boiled eggs, ½ cup onion, ½ tbsp chilli paste, ginger-garlic paste, 200 ml milk, cream, pepper powder, ½ tsp, coriander powder, ½ tsp garam masala, coriander, Salt

Start by boiling the eggs. Cut them into halves and keep them aside. Heat oil in a pan, add the onion chilli paste and stir constantly to ensure it doesn't brown.

Once the paste softens, toss in the ginger-garlic paste. Cook until the raw smell disappears.

Now add the pepper powder, coriander powder, cumin powder, and salt. Keep stirring until the masala releases oil from the sides of the pan.

Switch off the flame and slowly pour in the milk while stirring continuously. This step helps prevent the milk from curdling.

Put the pan back on the stove and cook until the mixture thickens slightly.

Add the cream and mix everything well. Gently place the boiled egg halves into the gravy, letting each side soak up the delicious flavours for 2-3 minutes.

Sprinkle garam masala on top, stir it, and garnish with freshly chopped coriander. Serve it hot, and dig in!
